Marinade the mutton 

For marinating you will need : 

  1. Mutton (bone-in) – 1 kg
  2. Thick curd – ½ cup
  3. Ginger-garlic paste – 2 tbsp
  4. Turmeric powder – ½ tsp
  5. Red chilli powder – 1 tsp
  6. Salt – to taste

Let the mutton marinate for 30 minutes to 1 hour before cooking.

For the mutton masala

For making the masala you will need : 

  1. Oil – 4 tbsp
  2. Whole spices: bay leaf, cinnamon, cloves, green cardamom
  3. Onions – 3 large, finely sliced
  4. Ginger-garlic paste – 1½ tbsp
  5. Tomato puree – 1½ cups
  6. Red chilli powder – 1½ tsp
  7. Coriander powder – 2 tsp
  8. Garam masala – 1 tsp
  9. Mutton masala – 1 tsp
  10. Cumin powder – 1 tsp
  11. Salt – to taste
  12. Water – as needed
  13. Curry leaves – as needed 
  14. Fresh coriander leaves – for garnishing

1. Heat oil in a pan and add the sliced onions,curry leaves and whole spices. Cook until golden brown and aromatic. 

2. Now add ginger-garlic paste and cook till the raw smell disappears. Add tomato puree, chilli powder, coriander powder, cumin powder, and salt. Keep stirring till the oil separates from the masala.

3. Add marinated mutton to this mixture and mix it well for 10-12 minutes in medium flame. Pour in enough water and cook on low heat until the mutton turns soft for 40-45 minutes.

4. If you are using a pressure cooker, wait until 5-6 whistles. 

5. Finish it by adding the garam masala and cook until the gravy thickens. 

6. Garnish the Mutton Masala curry with freshly chopped coriander leaves.
